Vegetable Kabobs Recipe
Ingredients:
Marinade mixture or Italian dressing of your choice
1/2 lb of tiny mushrooms
1.5 lbs of zucchini; sliced 1 inch thin
12 pcs of pineapple chunks
16 pcs of cherry tomatoes
Instructions:
Clean mushrooms. Cut and throw away stems. Toss zucchini, tomatoes and mushrooms in with the dressing.
Cover in cling wrap and marinate for four hours. Next, drain the vegetables. Reserve the marinade.
Skewer vegetables and pineapples alternately and grill for ten minutes. Turn occasionally. Baste with remaining marinade. Serves up to six people.
