Texas Beef Brisket BBQ Recipe
Ingredients:
1 beef brisket (5 lbs)
4 c of mesquite (hickory chips)
Salt
Pepper
A few drops of Tabasco
2 Tbsps of mustard (dry)
1 Tbsp of paprika (dry)
2 Tbsp of lime juice
2 Tbsps of sugar (light brown)
1/4 c of catsup
3 Tbsps of sauce (Worcestershire)
2 cloves of garlic (small); minced
1/2 c of onion; chopped
1/2 c of tomato juice
Beer (12 oz)
Instructions:
Heat sauce-pan. Combine 12 oz beer, onion, the garlic, catsup, Worcestershire, sugar, lime juice, dry mustard, paprika, Tabasco sauce.
Sprinkle with salt. Crack a dash of pepper. Boil until sauce gets thick but reduced in half.
Soak mesquite inside a basin water for one hour prior to grilling. Place drip pans beneath hot charcoals. When charcoals are burning, drain the mesquite and include chips into the charcoal.
Place beef on top of grill on top of baking tray and baste with marinade. Grill covered for one hour. Rotate beef to the other side and baste with a few more marinade.
Cook for another hour until beef is cooked. Serves eight people.
