Swordfish Skewers Recipe
Ingredients:
3 lbs of swordfish (fresh)
2 pcs of bay leaves
1 tsp of oregano (dried); crumbled
1 c of cooking oil
1/2 c of fresh lime juice
2 pcs of onion; cut into 8 small wedges
Instructions:
Wash and clean swordfish. Remove the skin. Cut the fish to serving sizes about 1 inch thick. Place fish inside a medium sized bowl.
Mix together the rest of your ingredients then pour on cut Swordfish squares. Put inside the fridge for no more than three hours.
When you are ready to grill, skewer fish cubes and alternate with onion, making sure that skewers are oiled properly.
Brush fish kabobs with the prepared marinade. Broil up to fifteen minutes. Turn frequently to distribute heat evenly. Serves eight persons.
