Spit-Cooked Beef Roast Recipe
Ingredients:
A dash of salt
Freshly cracked black pepper
A tsp of steak sauce (gourmet style)
1/4 cup of sesame oil, safflower oil, or peanut oil
2 pcs of garlic
6 lbs of beef (for roasting); de-boned
Instructions:
If grilling one single piece of cut beef roast, pierce meat with a tapered slim knife incising the beef about 1 inch deep. Hold incisions apart and generously coat the beef with pepper, garlic and salt. If using rolled or rounded roast, untie the cord then place all seasoning inside meat.
Roll up the beef and re-tie the cord. Mix together oil of your choice and the steak sauce then generously rub this onto the beef.
Save remaining marinade for when basting. Skewer roast using a roasting rod (spit rod). Make sure to place a medium sized baking dish beneath the roasting meat for catching the drippings.
Sear your meat by cooking on high then turning down to medium heat when meat has charred beautifully. Baste frequently with marinade. When all marinade is used, use drippings to marinade the beef.
Cook to rare for one and a half hours, medium rare for two hours and well done for two and a half up to three hours.
