Spicy-Orange Grilled Shrimp Recipe
Ingredients:
2 lbs of large shrimp; cleaned, shelled & de-veined
4 pcs. of green pepper (Jalapeno); cored & chopped
1 c of lime juice (fresh)
2 Tbsps of sauce (Tabasco)
1/3 cup of vinegar (Balsamic)
2 Tbsps of freshly ground black pepper
1/2 c of marmalade or orange preserves
1/2 of oil (peanut or corn)
4 cloves of garlic; minced
4 Tbsps of fresh Cilantro; chopped
2 tsps of salt
Instructions:
Heat the pan. Inside a small bowl, mix together the oil, lime and vinegar. Place the lime-vinegar seasoning inside a pan and set to medium heat.
Next, add the marmalade, the Tabasco, freshly ground black pepper and salt, stirring continuously. Afterwards, mix in the Jalapenos; add the cilantro leaves and garlic. Take off from the heat.
Assemble shrimps into a large glass bowl. Pour the marinade over. Cover with plastic wrap and keep in the fridge for 6 up to 24 hours until ready to grill.
Marinade should be perfect for grilling fish or lobsters too.
