Marinated Grilled Leg of Lamb Recipe
Ingredients:
1 lamb leg (5 pounds)
1 cinnamon stick
2 thin sliced lemons
2 c of white wine (dry)
1 Tbsp of thyme
Instructions:
Mix herbs with wine and lime juice. Marinate lamb. Cover and place in fridge for forty-eight hours, turning lamb at least thrice per day in order to soak in flavors.
Prepare grill. Burn charcoals on high heat. When charcoals have been burned down, include a number of hickory woods to the fire.
Make small incisions across legs of the lamb, so that smoke can penetrate the meat. Grill covered for an hour and a half, turn once. Strain spices.
Cook marinade on medium heat until reduced but thickened. Pour marinade over lamb. Serve with white rice.
