Marinated and Grilled Chops with Summer Squash Recipe
Ingredients;
4 pcs of squash
2 pcs of chopped pork; 1 1/4-in thick
1 pc of ginger; peeled and grated (1 inch per pc)
1/2 tsp of pepper flakes
3 pcs of garlic cloves; minced
2 Tbsps of oil (peanut)
2 Tbsps of sherry (dry)
2 Tbsps of soy sauce (or Tamari)
Instructions:
Combine the ginger, pepper flakes, garlic, peanut oil, sherry, and soy sauce altogether in one bowl. Put the pork in and turn to be fully coat. Set it aside for half an hour.
Preheat grill up to medium-high heat. Rinse squash under running water, and cut ends off.
Arrange the pork on top of the skewer. Afterward, add squash in a bowl, then toss w/ marinade. Turn pork as desired (7 minutes for each side). Add squash over grill.
Turn squash as needed (ideally every 3 minutes). Baste the pork; turn as desired. When fully cooked, remove the pork and squash. Serve w/ stir fry veggies (or coleslaw).
