Marinated and Grilled Chops With Summer Squash Recipe
Ingredients:
2 slabs of pork chop about an inch thick
3 to 4 pcs of summer squash
1 pc of ginger-root (2 inches thick); peeled & grated
2 Tbsps of soy sauce (Tamari)
2 Tbsps of oil (peanut)
2 Tbsps of dry sherry
2-3 cloves of garlic; minced
1/2 tsp of red pepper flakes
Instructions:
Approximately 45 mins. prior to dinner, combine all marinade mixture inside a bowl. Place in all the pork chops. Coat well with marinade.
Set it aside and allow to sit for one hour (room temperature). Preset grill on medium heat. Wash and clean squash. Slice off ends. Cut them lengthways and then set it aside.
To grill, place pork meat on top of charcoal grill. You can now marinate your squash making sure to coat all sides evenly.
Grill pork chops about seven minutes per side. Place squash on grill. Baste them both with marinade frequently. Grill the squash three minutes more per side. When done, serve with cold coleslaw.
