Grilled Stuffed Squash Recipe
Ingredients:
4 pcs of medium sized winter squash
1/3 c of butter; melted
1 tsp of salt
Freshly cracked black pepper
3 c of apples; diced & unpeeled
1.5 c of sugar (light brown); packed
1/4 c of peanuts; chopped
1/4 tsp of nutmeg; grounded
Instructions:
Cut squash across the length. De-seed and remove membranes. With two tablespoons butter, generously smear all sides of the squash.
Dust over salt. Crack fresh black pepper over squash. Put cut-side facing down over a well oiled baking dish. Bake for forty minutes, on high about 350 degrees F until they are tender.
In the meantime, mix together apples, sugar, nuts, nutmeg plus remainder of the butter. Fill in cavities of the squash loosely with the mixture of apples.
Grill over hot coals about five inches over for about twenty minutes or until it is soft or apple blend gets heated thoroughly.
