Grilled Rack Of Lamb with Plum Glaze and Oven Dried Plums Recipe
Ingredients:
1 lb of plums (Freedom); quartered and pitted
1 tsp of honey pure)
1 pc of Jalapeņo pepper; sliced thinly
2 Tbsps of sugar
1-1/2 tsp of wine vinegar (red)
2 tsps of lime juice
2 lamb racks (3-1/2 lb)
Pepper (freshly ground)
Salt
Sprigs of thyme
Instructions:
Combine honey, plums, jalapeņo, sugar, juice (lime), and vinegar inside a saucepan then cook above gentle heat till plums soften and the juice has thickened slightly, about half an hour.
If mixture isn’t juice, gradually add in water; preventing from scorching. Take out from the heat and strain; discard the solids.
Rub salt, pepper on the lamb then foil the bones; preventing from burning. Heat the grill and cook lamb for five mins with fat facing down. Brush glaze, then flip over. Brush occasionally.
For a rare cooking, cook till temperature reach (135 degrees F) for 10-12 mins. For well or medium. cook it longer. Let lamb rest in ten mins before serving.
