Grilled Peaches Recipe
Ingredients:
Peaches (1 peach to a person)
1/2 c of vinegar (sherry or balsamic)
1/4 c of sugar (brown)
Juice from 1 pc of lemon
1/4 tsp freshly cracked black pepper
Instructions:
Cut peaches in half. Take out the pits. Distill about two teaspoons full of lime juice over peaches.
Cover peaches with cling wrap. Set it aside. Inside a sauce-pan, mix vinegar, sugar, the remainder of the lime juice.
Add the pepper. Cook until it thickens but reduced in half. Place cut side of peaches on hot grill.
Make sure grill is well oiled. Start grilling peaches for two minutes until visible marks from grill appear on peaches. Turn peaches to baste with vinegar dressing.
Cover grill for three minutes more until peaches reach soft consistency.
