Grilled Lobster and Lentil Salad Recipe
Ingredients:
4 pcs of lobster tails (fresh, 8-10 ozs each)
For the marinade:
1/2 c of vegetable oil
1 pc of lime or lemon; juiced
1/4 tsp of tarragon (dried)
For the salad:
6 c of water
2 c of lentils (cooked)
1/2 c of green bell pepper; chopped
1/2 c of red bell pepper; chopped
1/2 c of onion (chopped)
1/2 c of carrots; chopped then blanched
1/4 c of wine vinegar (red)
1/4 c of olive oil
Pepper, salt, nutmeg, and Tabasco sauce (to taste)
2 pcs of bay leaves (dried)
2 cloves of peeled garlic; chopped
Instructions:
To cook lentils, boil water, cook lentils (dried) and bay leaves till tender. Marinate the lobster for twenty mins.
Heat the grill then cook lobster for eight mins. Slice the grilled lobsters thinly and set aside. Heat the oil on a medium-sized saucepan and saute onion, garlic, pepper, and carrots.
Add vinegar, spices, and lentils. For plating, place sliced lobster above an arranged salad.
