Grilled Chicken Breasts with Apple-Pear Salsa Recipe
Ingredients:
4 pcs of chicken breasts; filleted & halved
For the marinade:
2/3 c of olive oil
1/2 c of apple juice
1/3 c white wine (dry)
1/2 c of pear nectar
2 Tbsps of cilantro (fresh); chopped finely
1 Tbsp of soya sauce
Pepper
Salt
For the salsa:
2 pcs of apples (medium, Granny Smith); cored, quartered, then diced finely
2 pcs of pears (medium, Bosc); cored, quartered, then diced finely
1/4 c of cilantro (fresh); chopped finely
2 Tbsps of sugar (light brown)
2 Tbsps of lime juice (fresh)
2 Tbsps of pear nectar
2 Tbsps of apple juice
1 pc of onion (red, small); peeled then diced
Instructions:
To make the marinade, combine wine, juice (apple), nectar, cilantro, soya sauce, pepper, and salt; whisk well. Get half a cup and place in another bowl to be used in basting then cover.
Place inside the refrigerator.
Place the breast fillet on a baking glass dish, arranging into one layer. Pour the left marinade and coat well then cover the dish and place in the refrigerator for about four hours to a day.
To make the salsa, combine pears, cilantro, apples, sugar, juices (lime and apple), nectar, and onion; mix thoroughly. Cover then place inside the refrigerator till you need it.
Preheat the grill at a moderate heat. Take out the chicken from the refrigerator then discard the marinade. Cook on the grill till well done, 5 to 7 on each side then baste using the left marinade.
To make the plating, place the chicken on plate and place salsa on side.
