Barbecue Sauce Recipe III
Ingredients:
For the Chili Paste:
1 pinch of salt
2 Tbsps of wine vinegar (white)
1 pc of jalapeno (medium sized)
6 pcs of Anaheim chiles (medium sized); sized
8 pcs of red chilles (small-sized red serra or japones); dried
For the BBQ Sauce:
2 Tbsps of Worcestershire sauce
1/4 c of sugar (dark brown)
1/2 c of honey
1.5 c of ketchup
1 pinch of salt
6 Tbsps of wine vinegar (red)
1 Tbsp of mustard (dried)
1 Tbsp of oregano; minced
1 Tbsp of horseradish
1/4 c of ginger; minced
2 Tbsps of oil (vegetable)
1 pc of onion (medium sized)
4 pcs of garlic clove
Instructions:
Preparing chili paste – Preheat oven (350 degrees F). Seed, stem and chop chiles & jalapeno (1-in size). Place chiles in the pan then bake for at least 2.5 minutes.
Put in the food processor ’til finely chopped. Add vinegar, 3 Tbsps of water, salt (1 pinch) then process ’til texture is a smooth. And set it aside.
Preparing BBQ Sauce – Skin off garlic & onion then chop. Heat in saucepan then saute until softened. Add in the horseradish, ginger, mustard, oregano, vinegar & 1 tsp salt.
Cook in low heat until vinegar slightly evaporates; add honey, ketchup, sugar, 1.5 Tbsps chili paste, Worcestershire tehn simmer for half an hour.
